Simple Potato Soup


  • 6 large Yukon Gold potatoes, peeled and sliced
  • 2 sweet potatoes, peeled and sliced
  • 6-8 stalks celery, sliced
  • 2 large onions, sliced
  • 3-4 carrots, shredded
  • 1 cup butter or margarine

Melt butter in large pot and toss sliced vegetables in melted butter until coated. Add:

  • 2 tbsp salt
  • ½ tsp pepper
  • 8 cups water
     

Cook until vegetables are tender. Mash the vegetables in the cooking water and add milk. Blend in blender or use hand blender or food processors to puree and reheat to serve. Makes at least 12-14 servings. (Recipe can be halved.)
