Broccoli Cheese Soup


  • 4 tbsp butter or margarine
  • ½ medium onion chopped fine
  • 4 tbsp all purpose flour

Melt butter in large saucepan. Cook onions till tender but don’t brown. Stir in flour and cook 3 minutes.

  • 5 cups cooked broccoli
  • 3 cups chicken stock

Whisk in stock and broccoli. Bring to a boil and simmer 5 mins.
Puree mixture in food processor or blender. Return to heat and add:

  • ½ tsp pepper
  • 1 tsp salt or to taste
  • 3 cups milk
  • 3 cups shredded medium cheddar
  • ½ tsp. Tabasco sauce
     

Heat thoroughly but do not boil. Top with fresh herbs like dill or basil and chopped red pepper. Makes 8 servings.
